Sweet Treat: Banana Bread - GF, DF, no flour or added sugar

Ingredients

  • 3 very ripe bananas

  • 1 cup almond flower

  • 1 cup almond butter (no added sugar)

  • 2 eggs

  • 1 tsp vanilla

  • 1 tsp cinnamon

  • 1.5 tsp baking powder

  • 1.5 tsp baking soda

  • dark chocolate chips (optional)

Directions

  1. Preheat oven to 375degF

  2. With a fork or in a mixer, mash 3 bananas

  3. Once bananas are mashed, add almond butter. Mix to combine.

  4. Slowly stir or mix in almond flower.

  5. Add egg, vanilla, cinnamon. Mix to combine.

  6. Add baking powder and baking soda. Mix until combined - do not overmix.

  7. Fold in dark chocolate chips (if using)

  8. Pour into greased loaf pan

  9. Bake for ~45-50 minutes, until toothpick inserted comes out clean

  10. Enjoy!.
