DINNER: Super Soup - GF, DF

Yields
6 -8 servings
Ingredients
1lb ground turkey (or meat of choice)
Olive oil/ avocado oil
1 bell pepper (orange, yellow, or red) - diced
1 medium onion - diced
1 zucchini - diced (quartered)
2/3 cup carrots - diced
1 Tbsp minced garlic
Fresh ginger - grated (+/- 1 tsp)
Lemon juice (+/- 1 tsp)
1 large can diced tomatoes
2 cartons chicken broth (I use low sodium version)
Spices
Cinnamon (be generous)
Italian seasoning
Chili powder (to taste based on how much heat you like)
1 bay leaf
salt and pepper to taste
Optional - Kale
Optional - pasta
Directions
In large soup pot over medium heat, brown ground turkey in olive oil or avocado oil
While meat is browning, dice your pepper, onion, zucchini, and carrots (and any other veggies you'd like to use)
Once there is little to no pink left in the meat, add veggies to pot along with about 1/3 cup water.
Cover pot and simmer for approximately 10 minutes or until veggies soften.
When veggies are soft, add garlic, ginger, lemon juice, diced tomatoes, broth and spices.
Stir and bring to a boil.
Cover and decrease heat to low - simmer for at least 15 minutes.
Optional - add kale and simmer for 5-10 additional minutes.

This soup is packed full of immune-boosting ingredients and is the perfect warm soup during cold MI winters.
We make a big pot of super soup every week or two and enjoy for multiple meals, usually over some GF pasta.
