BREAKFAST: High-Protein Cheesy Breakfast/Snack Muffins

Ingredients

  • 1 tbsp avocado or olive oil

  • 1 small yellow onion, diced

  • 1 red bell pepper, diced

  • 1lb ground pork, sausage, turkey, or chicken

  • 6 eggs beaten

  • 1.5 cups shredded cheddar cheese

  • 1.5 cups almond flour

  • 1/2 cup coconut or GF all purpose flour

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1/2 tsp ground thyme

  • 2 tsp baking powder

Directions

  1. Preheat oven to 400deg and spray muffin tin with non-stick spray

  2. Heat the oil in a skillet over medium heat, then add onion and peppers and saute for 5 minutes (or until soft)

  3. Clear the center of the pan and add the ground meat. Cook, stirring constantly, until it is browned, about 10 minutes. Set aside

  4. Whisk together the eggs in a large mixing bowl, then incorporate 1 cup of cheese. Add the meet/veggie mixture and stir.

  5. Add in the almond flour, coconut/GF flour, seasonings, and baking powder. use a spatula to mix until combined

  6. using a cookie scoop or spoon to distribute evenly in muffin tin (makes 12 full size muffins)

  7. Top each of them with remaining shredded cheddar and place in oven for 15 minutes, until slightly browned all over

Notes

Completely cool and store in an airtight container for up to three days in the fridge

To freeze, place in a freezer bag and freeze for up to one month
